I've made homemade mustard that is too bitter, how do I fix it?

Answer

If the mustard has already fermented you can work to even out the flavor by adding small amounts of mayonnaise. Although not a common fix it might make the mustard palatable. However, it might also be that simply allowing the mustard more time to achieve it's property flavor.
