Should I use only yokes instead of the whole egg in spaghetti alla Carbonara?


Egg whites will curdle at a much lower temperature than the pasta will be when it comes out of the pot. For this reason it is recommend to use only the egg yokes (one per person) instead of the full egg.

Put the yolks only in a large bowl and whip them, add pasta al dente without straining it, using a large fork to take it straight from the pot, and then quickly mix them together while adding the remaining ingredients.
