Ingredients
- 4 lbs Gooseberries
- 4 lbs Sugar
- 20 oz (1 UK Pint) Water
Instructions
- Wipe, top and tail the gooseberries.
- Put the fruit and water into a large heavy saucepan and bring to the boil.
- Turn down the heat and simmer gently for a quarter of an hour.
- Add the sugar and continue to cook gently.
- When the sugar has dissolved - but not before - bring the mixture to the boil.
- Boil , stirring (very!) frequently for 10 - 15 minutes until the jam reaches setting point.
- Skim, pour into warm clean jars and cover.
