Gooseberry Jam

Ingredients

  • 4 lbs Gooseberries
  • 4 lbs Sugar
  • 20 oz (1 UK Pint) Water

Instructions

  • Wipe, top and tail the gooseberries.
  • Put the fruit and water into a large heavy saucepan and bring to the boil.
  • Turn down the heat and simmer gently for a quarter of an hour.
  • Add the sugar and continue to cook gently.
  • When the sugar has dissolved - but not before - bring the mixture to the boil.
  • Boil , stirring (very!) frequently for 10 - 15 minutes until the jam reaches setting point.
  • Skim, pour into warm clean jars and cover.
