Key West Lime Mint Dressing

Preperation Time: 5 minutes
Servings: 1 cup


  • 1/4 cup fresh lime juice
  • 2 tablespoons sour cream
  • 2 teaspoons sugar
  • 1/2 cup fresh mint leaves
  • 1/4 cup vegetable oil
  • salt


In a blender or food processor, combine the lime juice, sour cream, mint and sugar. With blender running, add oil slowly and blend until the dressing becomes thick. Season to taste with salt. Transfer the dressing to a bowl and chill.

Serve with sliced nectarines, peaches and cantaloupe.
