Rochester Cranberry Maple Muffins

  • 1 cup sugar
  • 2 eggs
  • 1/2 cup (1 stick) unsalted butter
  • 2 teaspoons pure maple extract
  • 1 1/2 cups unbleached flour
  • 1/2 cup chopped walnuts
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh or frozen cranberries, halved


Preheat oven to 375 degrees. Line 12 muffin cups with paper liners. In large bowl, combine sugar, eggs, butter, buttermilk and maple extract. Stir in flour, walnuts, baking powder, salt and cranberries. Spoon batter into prepared muffin cups. Bake 30 minutes, or until tops are golden brown and wooden pick inserted in center of muffin comes out clean.
